I'm very new to the mini world. Ive always wanted a mini and my knowledge of them is growing massively.
I was wondering how the gearing ratio works?
And how you dictate what gearing ratio is correct for you engine?

Do you mean Final Drive (FD) or the gear ratios?

Your question makes me think you're asking about the FD?

Not sure of your opening question "How Gearing Ratio Works" but if you were wanting to know some Gearing Basics, there are loads of Youtube clips that explain and show these aspects very well.

Your question makes me think you're asking about the FD?
If I can expand a little on Mini Manannan's post.
There are 3 sets of gears on a Mini you can swap around to get different ratios from;-
The 'Drop' Gears - which are between the engine and the input of the gearbox,
The Gearbox itself, and
The Final Drive (FD) or Diff gears
Once fitted, the Drop Gears and Final Drive ratios are fixed, only those in the gearbox are 'variable' but across 4 'fixed' steps.
Basically the selection of ratios comes down to what the engines characteristics are and what the car is being used for.

Indeed, there are three sets of gears on a Mini.
But don't forget to take in account the wheelsize your car has and the section of the tires that you use.
In the end is it the circumference of the road wheels that make the meters.
