I can not remove the exhaust valves from my cylinder head. They move freely but it appears that the top of the valve stem is slightly mushroom shaped so I cant slide them out through the guides ?

Have you removed the valve stem oil seals?

As the valves are scrap file the burr off and throw them away, the reason for the damage is probably poorly set valve rocker clearances sometime in its lifetime. ....
You will quite likely also find your camshaft is scrapped, I would put a DTI (Dial Test Indicator) in each push rod in turn and check to see if all the inlet have the same lift and all the exhaust have the same lift !
Do not check inlet to exhaust as they may have different lift heights from each other.
If you find that there is no commonality in height across each push rod you may have a damaged camshaft, further checks could be checking the overall displacement of each pushrod to see if you have the same lift but at different positions, ie poorly ground camshaft, this would not be an issue, however the wear if present will be.
