just bleed as per the order for you circuit.
how you do it depends on what kit you have.

Dont forget though to make sure the new calipers are on the correct side. Brake nipples upper most. Might be teaching you to suck eggs but it happens a lot.

If they are the wrong way up, you will never bleed the brakes.

So by draining down the brake fluid, how easy is it to refill? Obviously there will be a lot of air in the system. Is just a case of bleed in sequence? Or should I expect it to be not so straight forward? I have borrowed an eezibleed kit
There's no need to bleed it dry, you'll never get it all out anyway. Just put plenty through each corner and you won't go far wrong.
Edit:
One caveat - if contamination is your concern you'll want to be pulling the components apart anyway, that's the only reason I'd want to drain it all down just so I can clean and inspect. If it's otherwise good, just put plenty of fresh fluid through.
