My question is - Is the gearing for the odometer in the dial. And can that be changed or is it easier to just get a uk dial? Wasn't sure if the gearing on the diff needed to be changed.

The gearing within the speedo head for kmh to mph is different.
The gears themselves can be changed, but quite a fiddle - if you can get the right gears, there were a couple of different ratios.
I'd suggest you'd be better off either tracking down an mph speedo or an alternative could be to get a change speed box that is usually fitted to the back of the speedo.

I have a JDM Cooper and swapped to this easily. Now I know how fast I am going :)

Because, as said, simply changing the face wont fix anything.
