This may seem a silly question, but what is the purpose of a catch tank for the breather pipes? What is the difference between a pipe going straight out into air rather than going into a tank to then go back out again? Does it help with fume smell or something?
Thanks

It lets the fumes out but traps the liquid.

this is another race cars do it so it must be good thing. venting direct to air makes for a smelly car and a messy engine bay. this is not permitted on race cars and they have to have catch tanks with a specified volume (read rules and regs) so that they can contain any oil displaced by the engine so there is nothing spilled on the track.

pointless on a road car you may as well take advantage of the  lower engine pressure created by original system that also burn of the vapour in the engine.
