Hi, when rebuilding a engine should you use gasket sealant on every gasket (apart from head gasket) or are some gaskets used dry. Any suggestions for which product to use if that the case.

The gasket between the block/Gearbox and the transfer case should NOT have any sealant. Very important it goes on dry.

On the others, some people use grease, some blue Hylomar, some other stuff.

I used a thin smear of Hylomar. Seems OK.

I use Permatex / Loctite No.3 on all gaskets, except for;-

Head Gasket - usually dry, but depending on what it is, I may use Blue Spray on Hylomar

Cork Rocker Cover Gasket - dry

Water Pump, Thermostat Cover, Heater Take Off - RTV

Because I don't think you can reliably measure the idler end float if you have sealant on the gasket. There's no real reason to to do it. The gasket seals perfectly ok dry.

will have zero effect on endfloat.

It may do and theoretically, you may have a point, however, you'd need very very expensive and 'fine' measuring gear costing all of your children + the wife to be able to sensibly measure it.
