So I have a dual oil pressure & water temp gauge that I’m going to fit pretty soon.
Where’s the best place to route the pipes from engine bay through to the dash?
Is there a preferred hole in the bulkhead?

I ran mine through the gasket where the centre binnacle sits

You could go through the air intake pipe at the front

I went through one of the heater pipe grommets for my oil pressure

I might try this for both oil pressure & water temp.

Ah ha! I found the perfect place.
There is an unused grommet behind the wiper motor, so I’m gonna use that.
