If you go 7.5" discs your wheels will stick out further so may be a problem if you don't have arches. You will also need to change to spaced drums and longer studs on the rear to match.

Much better brakes, but yes you will need to swap virtually everything.

It is quite common for modern Pad material to wear discs out.
If you don't do much mileage, do nothing, if you do high mileage, up grade when the discs are worn out.

The 7.5" are better considerably Brakes and you can get all parts you need for them fairly easily.
Some parts for the 7.0's are hard to come by and if you find you need a drive flange (which can get chewed up from a wheel bearing), then that would likely be the end of the road for them, as they are long time NLA and pretty much non-existent used in a condition that is serviceable.
