There are many companies that do it, Optimise Automotive are popular on here, Newton commercial are a more pricey option but very good quality and have unique reproduction materials

Yes, I've changed the seat foam on mine recently. Some of the plastic trim can be a pain to get off but the covers are just clipped on around the edges & use hog rings for the centres. Pick up a cheap set of hog ring pliers and some rings off ebay and you'll be fine if you have some other basic tools.
