I will be changing the fuel level sending unit on my ‘76 mini saloon. Will the rubber gasket do the job or is some additional sealant required? If so, any recommendations?

No, leave it as is.
What I would say is that as long as the rubber is subtle, and not hard or perishing, that will be fine.
You can make matters worse by putting sealants in and making the seal sit uneven
