Having got my engine now working in the Rossa kit car - the clutch pedal will not work. Plenty of fluid in system. What should I look at first.

Engine is 1275 MG metro of about 85 vintage

The clutch slave cylinders often don't like sitting idle. First thing would be to look for movement in the clutch operating arm. What type of clutch is it? By the pedal not working I presume you mean the clutch doesn't disengage - so it crunches if you try to put it in gear?
