Yes, That will do the job, they would normally come in a sealed bag bearing SU Carburetters in blue lettering

Do I need all these extra seals and gaskets, or should i just go with the cheaper one that gives me the seal for the bottom of the carb?

I have noticed (and it was evident before also) that there is a slight lag, in all gears when you try to accelorate hard, just pauses and then goes...any ideas?

Lean running condition, try a half turn richer

Ok so I have found out there is a screw to turn on the carb to increase or decrease the amount of fuel. But before I start messing with this.......
See attached photo of my spark plug - does it look like the mix is too lean at the minute, or just spot on (by the colour of the end of the spark plug)?
If its looks spot on - by increasing the mixture, wont I just be making it too rich?
Also, if you see that photo of the dash pot needle - to me, it looks bent, or out of line. Is it supposed to be like that?
Could this be causing the pause in acceleration?

That needle looks bent to me, best to remove it and check it on a flat surface
Will do. Not sure if the needle is bent or actually not sitting level at the base. If you look at the base of the needle to the left, it looks like its not sitting flat/flush?
Any thoughts on the spark plug colour indication too rich / too lean?

Is the needle a swinging springy one?if so it looks OK.Plug colour cannot be relied on unless checked after a reasonably hard run,and then it is not an exact science.Steve..
I'll get the dash pot of again a little later and have a look. From memory I think it is a springy one....but will double check.
Is there a better way to check the fuel mixture?
