John Cadogan (YouTube) has done an informative piece on cooling systems, coolants and pressure effects which should help clarify normal coolant operation:

In summary, a coolant system with 50:50 mix and 15lb pressure cap will have a boiling point at ~140C (without antifreeze at 15lb boiling point is 120C). In a MPI coolant system without faults the thermostat will open at 88C to allow the flow of coolant through to the radiator, with the fan engaging at 105C to provide additional cooling at the rad.. This provides 15-35C headroom before the system boils and dumps the coolant.

I drove the car over the weekend and the cooling system is working well thank god.
