What is the preferred option (engine in).

Install the engine mount onto the subframe first and then mount the clutch cover.
Or
Bolt engine mount onto clutch cover and then install?

Screw the mount to the clutch cover first.

Whenever I've had replace RH engine mount, I jack up that side of the engine (slightly) to relieve pressure on the fasteners,  mount off, mount on to the clutch cover, then lower the engine a bit to align the holes in the subframe with the engine mount.  I use a set of forceps to install the bolt, head up.

Engine mounts always to the engine first. Otherwise you can’t get anything in to get them aligned.

Whatever you do, don't use the mounts with the threaded bushes. They are for metric bolts and if/when you cross thread a bolt you have to angle grind the bolt head to get the mount out and then get another new mount.
Personally I always weld 5/16" nuts onto the new mount and I open out the holes in the sub-frame to 3/8" and use large flat washers.

Umm, not all are metric; I've got the Minispares 21A1902ST and they definitely have 5/16UNF clich nuts fitted. They've got a nice lead in too which helps gets things lined up straight. Their website specifies GFK5184 as the mounting bolt !
