Ok this is a weird one.

I turned steering wheel right while going in reverse, at some point I let go of the steering wheel, and I realized the steering wheel kept turning right. It doesn't happen moving forward.

I recently got the steering rack replaced. It was really cold outside, probably close to 0 celcius, so Im not sure if this would have contributed.

Is something overtightened?

Often a sign that the set back is not the same. Ie the distance between the front and rear wheel centers is not the same.

The steering / suspension geometry has Castor. Among other things, it's this that self centers the steering when moving forward, but it will only work like this when moving forward. In reverse, if the steering is off center either way, it will want to keep turning harder to which ever way it was steered off to. It's normal and what I'd expect. It's also a down side of having a lot of castor set in if adjustable components are fitted.
