Have noticed lately that every time I try and accelerate in first gear the car feels like
It’s going to stall. When I push the gas the car starts to stutter and almost stall. I recently adjusted the carb so I’m thinking it might be to lean but looking for other ideas.

When you say you “adjusted it” - what did you do and why?

Theres lots of things to check if you don’t know what’s wrong:
Dashpot oil
Idle mixture
Timing
Vacuum leaks
Spark plugs
Spark plug leads
Cap and rotor condition
Battery voltage while running

If it is accompanied by black smoke from the exhaust then a clogged air filter may also be to blame.

Start there!

If you add a bit of choke dows it improve? If yes, too lean. If no, poss too rich.

There is nothing to adjust on an SU other than the base tickover.  Everything else needs tings changing/replacing.

It does improve!

Well there is also the mixture, which sounds like it's a bit out on this car.
