The one I have fitted goes off if I hit it with my hand but no idea what the force is.

Same here - I have one feeding the fuel pump on the inside of the boot - I can trigger it with a firm hit but it has not gone off when driving....yet!

I triggered the one in the Cooper SPI I once owned by running over an already dead animal the size of a medium sized dog when doing 70 mph.

What a great question!   

 

Similar to above, I have heard of rally cars 'activating' the relay when not intended.

 

My googling seems to point to some specifications of deceleration forces of 6 g or more .  

 

Here is a link to one with some specs of it in the blurb ( link)

 

 and after once experiencing the amazing deceleration forces of a Porche GT3 ( which was actually more impressive to me than its glorious acceleration)  I have just looked up that those forces were about 1.25 g deceleration 

 

and probably not where you were headed but just incase I installed a tachometric relay in a tarmac race mini with no unwanted intervention by the unit to date.
