Would a CB fit in the current radio housing above the passenger footwell or is the bungy lead attached to the side.

Yes, most CBs will fit inside the radio housing, though some may be a bit small for the hole and look a little odd... possibly not the best location though, not so easy to reach the controls. Some mic leads are connected to the side, other are connected to the face (depends on make / model). a small CB with the mic connector on the side should still fit in the housing with no problems. Not sure if the standard mic lead would streach all that far to the driver seat though, at least not without perminantly streaching it. Would be fine if only used by the passenger though.
Pics, hmmm good suggestion! I'm fitting mine in properly soon (at the moment it's being swaped between house, and two cars), will take a few pics of different mounting positions.

i think if i got one id want it sat further back on the roof, centrally. can you get one with big coils at the bottom?

yes you can. take a look at www.thunderpole.co.uk. theres tons of aerials on there.
