depends what sort of floor pans you've got...
You can get replacement panels (these will realy be limited to heritage) or repair panels...
If you look at repair panels, they are made so they fit over the existing panel rather than replacing them.... obviously this is not ideal but can be used to replace BIG holes in the floor, otherwise I prefer to cut out the rotted section leaving as much of the original floor as possible present, and then cutting an equivalent section out of the repair panel to replce... this will mean you have a not too attractive step in your floor pan.
If you are cutting a lot of the floor out, it's a good idea to brace the shell first to prevent warping.

after you have finished all the welding use underbody sealant to help seal it and protect the new panels..

When fitting these panels i allways :place the panel in place , scribe around , remove panel , cut out leaving about 25mm overlap (beware as your brake pipes , fuel pipes and battery cable run under your flor!)
I cut this out using an angle grinder with a cutting disk (these are about 1mm thick)
note: when fitting the front floorpan leave 25mm from the seat cross member forward as your overlap .
I allways now fitt them complete as if you only fit a section you can gaurentee that you will be patching again in 12 months time ,
I tack around the inside , go underneath and tack round the edge there , go back inside and seam weld right around the whole panel ,dont forget to seam-seal underneath or water can get into the seam and start rotting it out straight away !
