I'd also use new bearings if you've gone to the trouble of a full strip down.
If you replace the rings it could do with honing.

Buy an engine gasket set all the seals, lock tabs and gaskets will be in it.

How did the crank journals and shell bearings look? If there's evidence of wear you might want to consider getting them ground and using different sized bearings to match.

Honing is where you scrap a tiny amount off the bores to remove the glazing and give you the crosshatching on the bores again.
If your engines done a fair few miles then it's a good idea.
If the bore is bugged then you get it bored out.
You'll prob be fine. Seen a 1909 block that wasn't even glazed.

OR go to a local machine shop and they can check if it's still all good to use. Cost £5 to check it....well did for me,.

Having the mains reground is a small price to pay for a nicer and longer lasting engine. If you can I'd take the block in as well get the bores measured and see what it'd cost for a quick dip in their tank of chemicals.
In any case you should remove the core plugs and thoroughly clean all the oil ways.
it's fun spending someone else's money for them

Oh, also the half moon rubber seal DOESN'T have any sealant on it. It's held in place by the parts around it.
