Are you dead sure it's not stamped 'top' somewhere?
I think copper side down - but it's been a long time.

I've noticed on a few head gaskets there's no top mark on them..makes me wonder if it matters, they seem to be totally symetrical, be interested to know why they have to go a certain way ?

because there is an oil channel on one side of the block which is not on the other...
More and more often the HG can go either way as the put a 'dummy' hole in it.. however if it has top written on it then put it top way up..
also if you're using a copper head gasket, then MAKE SURE you head and block are spotless and flat...
Personal opinion, copper ones are not worth the hassle nor money...
small bore use a bog std gasket which comes with your head set, big bore use a BK450...
