At the end of the day it's all a bit of guesswork with sell by/use by dates, as, with anything, it depends how it has been stored which the manufacturer has no control over.
Obviously some things with short sell by dates can go off very quickly but for items with long sell by dates naturally there is a lot more variation....
For example bread which is kept airtight but stored in the fridge can last for weeks without going mouldy but if it is left on the kitchen worktop open to the air can be mouldy the day after you bought it and still in date!
Things like sauces, some people keep in the fridge and others don't....

I found some ham in the fridge at work on Friday and it was dated 28 Sept.. I figured eating it was more fun than not and so i did

I would Never risk pork out of date had food p. a few times off it and well sick. The beer cans are a lot thinner these days always wash the top some have spills on them from other broken ones with travel to get to the shops loads of germs on them Drink Before You Think. Clunk Click.
