The one I made used a scaffold pole which had mounts to the suspension points,no issues with it taking the weight so you should be fine.That said if I was to make another one I would probably do it without the pole going all the way through.

If you join the uprights with a couple of planks and fit castors you can work outside on sunny (?) days.

But unless your internal bracing is very well designed (and attached) don't you stand more of a chance of the shell flexing when you start cutting panels out ?

Any rollover jig used will still require extra bracing in the car if you are going for a full floor replacement say. i have the same roll over jig as Tupers and in the Ebay link.
There are a lot of panels that you can replace without bracing but any serious panel work like door steps with no sills fitted, complete floor pans, half floors etc but not the quarter floor panels then these would need bracing.
If in doubt then brace, its better to be safe than sorry.
