try a fresh slave cylinder, if the master cylinder was shot, when you clamped off the hose to the slave the pedal would go down.
if the slave is gone/going without the spring it pushes the slave rod out but with the spring fitted its causing the slave to leak with the extra pressure.

Too late in the evening to attempt a fix now BUT................... my flexi hose is weeping ever so ever so slightly, not dripping and amount of fluid lost is very little, but if i wipe the hose off clean, pump the pedal a few times either with or without spring attached, within a minute the lowest point of the flexi before it goes back up towards the union on the bulkhead is getting wet, will fit a new one and new slave in the morning(slave may well be fine but while I am in there!!) and hopefully might make some sense, I guess when I clamped the hose off yesterday I was above the leaky point, which gave me rock hard pedal!!! thanks for your help so far

Quick overview, new flexi hose fitted as old one had perished and was weeping very slightly, clutch bled to perfection!!! and clutch operating perfectly WITHOUT THE RETURN SPRING!!!!!!!!!!.. No matter what I do with the nut on the end of the plunger arm, at no point whether its fully against the clutch cover, or right out to the inner wing end, I can't get a clutch, if I adjust the clutch as per haynes manual, and don't use the spring, the clutch works fine, much head scratching and confusion in west cornwall today!!!!!!!!

Where the slave cylinder piston sits in its bore is down to the mechanical bits of the release mechanism, it may be the bore is worn or corroded where the piston now sits with the new mechanicals. If the master is ok, then the same volume of fluid is going in to the slave, either the mechanical bits are worn creating more slack to take up or fluid is getting past the piston. The return spring's job is to keep the release bearing off the clutch diaphragm. If you can't fit the spring and adjust the clutch return stop to make it work then it's faulty hydraulics.

If the slave was leaking there would be a puddle under the car :)

It would appear that there is an epidemic of head scratching going on :D

It might not have got passed the slave dust boot yet, or it could be leaking air in more than fluid out.

yes that could be true :D

Try lifting the boot off the slave cylinder

Just to re-check.
With the spring removed have you undone the big nuts on the end of the plunger (the 'overthrow stop nuts)? Then have you pulled the arm as far as it will go away from the slave cylinder, then set the 7/17" AF screw which controls the 'slack' arm position to give between 0.015" and 0.020" clearance between the arm and bolt head and locked that clearance with the 7/16" locknut? Following this, re-fit the spring and check for clutch operation without re-setting the overthrow stop nuts.
If it then works OK, set the overthrow stop nuts by fully depressing the clutch and winding in the inner nut until it just touches the casing, then by half a turn more. Lock it in this position.
