need at least the metro 4 pot calipers with drive flanges to suit.

Standard Metro 4-pot calipers are what you use as the discs are much thicker than the solid ones.
GBC2031 is the part no. of the RH caliper, but can't find a ref to the LH side.

I know in theory they will cool better and scrub the pads but was wondering of there is any noticeable difference in the real world.

Dont bother with the drilled/dimpled and grooved discs, they are just noisier! Just fit a good quality set of standard discs and quality pads.

Remember that the Mini is a very light car, so the braking system only needs to be able to stop around 750 kg loaded weight. Most of the braking issues I've encountered, with the exception of drum brakes and the 997 7" disc brakes, have been caused by poor condition/quality discs and/or 'cheapie' brake pads.
Unless the car is to be used for long-distance racing the standard discs are fine. However, they must be genuine original quality and material, not 'Chinese monkey-metal' ones and if you want top quality pads then Mintex 1144 are best with the 8.5" discs or 'carbon-metallic' ones for the 7.5" 'S' brakes. With 8.4" discs I've used Mintex 1177 material and have even had the discs glowing red hot without any loss of braking capability (you do have to change the wheel bearing grease more often when you do that).
Personally I use AP600 brake fluid in the rally cars, but for road use DOT4 is fine.
The ability to stop the car to the limit of adhesion of the tyres is the most you need, as above, although those actually making a profit from selling the more expensive brakes would have you believe otherwise ;D .

Yes there for standard 2 pot calipers, but you want solid discs for them, dont use carbon metallic pads over grooved/drilled disc.

These are the brake discs - Mini Spares part number: 21A2612MS

Fitted the Mintex 1144s and new discs today. They aren't bedded in yet but already the feel is transformed, cheers Cooperman.

To bed them in, drive along in 3rd gear at about 45 mph. Press the throttle to the floor and use your left foot on the brake pedal to keep the speed the same. Do this for about 1/4 mile (no more than that). Allow the brakes to cool and repeat that about 4 times. Then the M1144's will be properly bedded in.

Apply GENTLE pression to the brake pedal if you're not confident with left foot braking.

I have them on the Surestop grooved discs. They squeak like hell. Is this the worst of the side effects?
