Subframes should be fine to hot dip as they are fairly heavy section steel. The one you can't do is a shell as the steel is far too thin and will distort.

You would need to think a bit about the rear subframe to avoid filling some of the voids with zinc but the people doing it should know what to look for and how to do it.

They also don't tend to like old stuff going into their tanks as they don't know what might be hiding inside and voids or box-sections. Quite apart from them ending up with rubbish in the tank there is a risk of explosions if hot metal meets water or oil inside a box section. Less of an issue with a Mini subframe than a box section chassis like a Land-Rover but one you might come across.
