If he has done brakes, suspension, steering, bodywork, engine, then what else is there to do on a road car?
With regards to "fancy covers that do nothing", look at the plastic crap over every single modern cars engines, dashboards, centre consoles, glove compartment lids, what about gutter trim, standard plastic arches etc, they don't do anything but are pleasing to the eye!
If you don't have rear seats then stick a bit of carbon in, it might look great, if not then you can sell it on and lose a few quid but not the end of the world.

I would stick money on them not fitting very well, and them requiring extra 'trimming' and probably will require flatting back and polishing to get a really good finish.
I'd save the £150 an spend it on a roll of alcantara, do the head lining (on the inside of the rails) and the rear seat/parcel shelf area.

My parcel shelf has already been done and apparently they come gloss finish already and head lining will be done at a later date when window screen has to come back out lol to be fair I may do what u said just cover the rear seat section
