I am going to be running my engine on unleaded fuel but using Castrol valvemaster does this stuff gunk up the head ,pistons etc overtime

No, used it for over a decade in engines with no ill effects

Valvemaster is brilliant - a syringe per tank and no valve seat recession.

It is a good choice. Just be sure to stick to the same additive all the time. If you run out of Valvemaster, don't put anything else in. One tankful without it will do the engine no harm, but mixing additives may well cause problems.
