Would it not be easier just to get hilo's?

Was thinking of getting some but once fitted never adjusted again so thought this option better?

Definately buy hilo's they are not expensive and well worth it.
Just a note from experience, once you start playing around with your suspension components. You'll probably end up needing to service your upper suspension arms and your knuckles are probably bonded to your trumpets beyond removal and same possible with your suspension donut and trumpet at the top end so if your gonna lower it just set aside a couple of hundred.
get two new donuts hi lo's new knuckles new bump stops to start. then prepare for possible replacing quite a few bits.. It is a mini expect the unexpected!

From what I've heard it's quite difficult as it would have to be a perfect cut etc, and making sure they're at the same level... may just be worth a set of hi-lo's to be honest.

That would make sense - that's what it is for the hi-lo's.
