Now if someone were to design a two speed pump.... using an AC unit clutch.....

 

As an aside there is no reason why your head gasket should fail at 110C......unless.....your water is boiling because you aren't holding pressure and you develop hotspots (steam doesn't cool). I work on equipment that contains several tonnes of water held at 180C and 14 bar, it's still water, just very hot.

Well I guess that's at least part of the reason why some race cars run an electric pump, as you can run the pump at optimal speed for any given condition including aftercooling post race/sprint/session.
