Look at the exhaust manifold and inlet manifold. Mostly the exhaust itself will be changed for another( generaly louder) model.

the standard non stage 1 mini exhaust looks like this:
A long double-box with a 'pea shooter' tail pipe. The down pipe (the bit that bends up at the other end) is clamped to a single cast iron exhaust-inlet manifold, that looks like this:

Yes it does look like a stage 1 is fitted, see pics below. (The inlet has a big MINISPORT.COM printed on it!)
Car runs perfectly, but stil feels like it could have a bit more power. I suppose I should really check it out on a rolling road to see if its tuned correctly.
After that, am I looking at upgrading the cylinder head? Or is there anything further that can be done with the exhaust system to get a bit more power/efficiency?

Changing it for a twin box RC40 or Maniflow would help a little but you wouldn't really notice. If that's already an RC40 on there you would just need to add the extra box in place of the forward pipe, I'm not sure what exhausts Mini Sport use i their kits. Really you need to find out what has been done and how healthy it is now before going further. Replace that cone air filter with a standard air box with a K&N in it and some extra holes around the outside, then check the needle is suitable for that and have a little tune.
