I have silica bags in the rear bins, and I don't get too much condensation (and I have a big leak in the car!)

And before you ask, no, i dont work for them.
Can you dry these ones out in the oven?

I'm getting 2 of the dehumidifier bags, and seeing as the last link is quite cheap, I might buy a 4 pack of them too. Some rose ones

Buying some of these now, what do I do with it when they're full of water? Throw away or empty of water? Rather happy buying a 4 pack is cheaper than buying a 1 pack with 2 quantity
You just empty it out and replace the crystals, there cheap to buy.
No need to place them in the oven.
to be honest I dont use the silca balls you can see in the advert but the airmax crystals instead as i find them more effective, they are the same bags as show in this other ad:

I get these 'refill' bags at a local store for cheaper and allow you to refill the box a few times before you run out of crystals.

IF the car definitely isnt leaking, it could be that youre jumping in it with damp clothes, have the heater on, windows closed, and as you wrestle with the stearing wheel through the twisty bits on the way home, your pulse rate increases, youre breathing hard, beginning to perspire..... (even when youre asleep you produce a fair bit of misture). One way or another the moisture content inside increases, then as the air temp cools down over night (cold air holds less water than warm air) it then condenses on any cold surfaces. Try having the window open on the last bit if not all the journey, fresh air / air flow is the best way to deal with condensation.

not tried the small dehumidifiers in the car but they work wonders in the wire compartment of the welder!

Cat litter in a small bucket (kids holiday/ beach bucket is ideal). Leave it in for a few days then put it in the airing cupboard or the oven on its LOWEST setting for a while to dry out, then repeat.
Or the cheap clay sort of cat litter and the legs from a pair of tights, then leave on a radiator once a week to dry back out and reuse.
