Right so I want to replace my ugly, old, grey headliner with something different and custom such as suede. I also want to put some dynamat under the headliner to reduce the outside noise (especially when raining). How is it best I go about this? Stick dynamat to the roof then the suede to that or is there a better method? Also what are your thoughts on using suede and taking it down the pillars to stop at black door cappings?

You could have an upholstery shop use you're original headlining as a template for a suede one. It would be best to have it professionally fitted as well as headlining's are hard enough to fit at the best of times and a suede one would take a lot of skill.
I wouldn't recommend sticking dynamat or any bitumen sheet type sound deadening to your roof skin. The factory used to do it and the pads would come off in the hot weather and stain the headlining.
A better option might the thick hessian type sound deadening into every corner off the roof. You could also try the foam egg crate stuff they use in recording studios.
