I stripped a bonnet with p80 on a da but it used a few discs and was quite slow as it clogged easily, no real damage to panel though

Nitromors paint stripper rules OK. Strip it back to completely bare metal, then etch prime, high-build cellulose prime/surface and then re-paint top coat.

I was thinking of sanding it back as I would not want to get the paint stripper in to the seams etc.

Those polycarbide discs are what you need they are only aggressive on paint and rust they will not touch good steel you will be there for weeks with a da on so much paint

First picture shows how all the layers of paint peel off. Second picture shows a small area where I used a polycarbide disc then a scraper to remove the old paint but leaving the primer which I think is the etch primer that waa used when the car was bare metal many moons ago.
