For what it's worth, in all my Minis and Mokes over the last 30 odd years, I've never had a By-pass Hose and Never drilled the Thermostat (which to some degree over-rides it's purpose). No issues other than the cooling system takes a little longer to fill.

but they will have the standard hole with wiggly thing in it

Yes and they are made that way.

there were/are some that do not have that hole with wiggly thing and that could cause issues.

None that I've had.

Some have had the wiggly thing, and some haven't. I've not been too bothered to look or check.

The warmer / hotter coolant will always rise to the highest part that it can (thermosyphon), whether there is flow or not (ie, when the Thermostat is shut).

As I have said and my experience, I haven't had an issue.

I like to drill and tap the water pump (assuming its a good pump) and head pipe and use a bolt to plug both, they can then be cut down and forgotten. No chance then of the thing leaking.

I either cut the giggle pin out of the thermostat if it has one or drill a hole.

Without a hole or giggle pin the engine gets up to temp quicker.

Its bonkers but every one is right, you can do what you like, without using a sandwich plate.
