My mate fitted a right hand tank to his Racing Green LE. He used to park in the middle of a bay and fill them using 2 different petrol pumps, just to confuse the till operator 😆

I don't know if you guys have CPC Brand of Caps in your parts, but I'm pretty sure it was in their's where I used to buy them. They are packaged individually, however I recall they had the key code on the packet, so only a matter of looking through a few to find a matching pair.
I'll add though, I found all brands of locking caps terrible for spewing fuel on corners, so I'd never lever these caps on, I'd only fit them if parking up somewhere that I thought might be a problem.
Off topic, but just thinking back to the fuel out the cap issue (there was a thread not long ago), I wonder how hard it would be to fit a slip in baffle ? I know some trucks have a straight tube that extends about 10" in the the tank, that's blanked off on the inside end and they have about twenty 1/4" holes drilled around the tube. They fit these to prevent sloshing and they are quite effective. Maybe try one, shorter (say 6 or 8") with say 3/16" holes and work up from that ? Our Mokes from 1963 to 1979 had a similar baffle, (that had the huge 4" cap), it was a lift out arrangement, with a plain tube and some fine gauze in the bottom end of it, though, these were less effective I thought. Anyone want to try ? I don't drive Minis these days.

Once the snow, ice and lock down ends, I think you are on the money

I ran out of fuel last summer on a road trip to Normandy, the kindness of strangers saved me from a long walk. Twin tanks would have been handy except for the loss of boot space, we were already using the back seats for sun loungers and picnic gear.
I'll sheepishly admit that one down side to having long range tanks is I often run out of fuel because the damn thing goes so far on a fill, that I just forget to check how much is on board. I keep a few litres in the Jerry can to get me to somewhere to fill up again.

to stop fuel running out of the caps on a slope is to fit a one way valve in each of the fuel lines to the T piece. But you will lose the self levelling and the tanks may not empty equally. also it is two more things to go wrong.
