that head work where the beak has been ripped out looks like it may have been intended for a turbo build, it used to be common to grind out the beak to drop the compression ratio.

I've got a 1293, HIF44 carb, Calver ST GT spec Head, Kent 266 cam, 1.5 forged rockers, 3.2 diff and 10"'s, which goes very well, not sure on the BHP, but as said above torque is what you want.
Have a look at the Calver ST head specs to see what valves he uses. You'll need to work out the compression ratio as well, aim for 9.75:1 to 10:1. If you're keeping a dizzy then it'll need to be re-curved to suit your engine (you can get dizzy's with multiple curve on).

And then am i right in think that calver ST would modify the head to get to the desired CR?
That sounds good, You would get away with standard rockers if you wanted to keep costs down and if your current dizzy is good AC Dodd can re-profile that to suit his cam and your compression ratio. I think they're the same pistons that I have, Or these are supposed to be good as well https://www.minispares.com/product . 3.4 diff will be better suited for B roads and trackdays, I find the 3.2 good for B roads and long drives.
Yep Calver will modify the head to get the CR you want.
You might want ARP head studs as well, expensive but they won't snap like a lot of others seem to be doing lately when being torqued down.

I spoke to AC Dodd a bit about the engine spec too and have got a good idea of what I’m gonna go for now. At what point do I need to consider balanced internals?

Balancing is beneficial at any power level in my opinion, when/if you're getting the crank ground you can give them the flywheel, conrods, and harmonic balancer as well and they can balance it up as a whole unit. The cost isn't huge but it's worth it I think.
