Timken come as a matched set of three parts. You did not mix them up or use parts from something else?

The whole point of a Timken Taper Bearing is that you adjust it !
The nut used to be adjusted until rotating the wheel gave a hint of resistance; the nut was then backed off to the nearest split-pin alignment.
The spacer was probably an EU directive to stop idiots tightening the nut so tight that the bearing became inoperable.

There are taper bearings without spacers, but not on Minis. The spacer allows you to clamp the inner races against the stub axle with the nut. That inner race assembly needs to be a close tolerance with the outer races & hub. As Nick says, Timken achieve that by putting together an assembly of components that together should match the "missing link" that is the outer race spacer, built in to the hub.
That's why they have to be fitted just as they were by Timken, even pairing the wrong inner race to the other outer from the same matched pair can mess things up.

If the originals are a good fit I see no reason to replace them. They're pretty bombproof as long as the grease doesn't get contaminated.

This seems to be a thing with Timken rear bearings currently. I recently tried four sets of Timken bearings in four different hubs and the exact same result every time. The two faces of the inner race were touching before the bearings seating.

Just an update I've been in contact with mini spares and timken are aware of the problem it looks like some of the later rover hubs are slightly different so there is an issue, mini spares have recommend I have the spacer machined down on the bearings faces or find some older hubs , or send them back which leaves me with no bearing,o joy
When you say 'later' do you mean 1996 onwards? It's surprising that this is a new issue as I'm guessing new timken bearings have been used in these later hubs for years? Why the problem now?
