I had a similar issue years ago, it turned out to be a cracked T piece. Hair line crack in the brass T piece that houses the oil pressure guage and the oil pressure switch.

Turning over on starter for a good 30 to 40 seconds. I tried letting it run for about 4 seconds and there was still no oil pressure.I prefer to trim the gasket around the o-ring groove - that’s how the original BMC gaskets were. However I doubt this is your problem.
When you’re looking for oil pressure each time - is this by turning over on the starter or with the engine running?
If with the starter how long are you trying for - it will take some time even if you previously had pressure.

I'll inspect that and anything else but I'd guess I'd see an oil leak from that piece when I'm running with oil pressure, wouldn't I?

Yes you would have thought so, but mine didnt seem to leak, but presummabley let air in, or sucked air, as a result I removed the T piece, installed the oil pressure guage on its own, and all seemed fine, then installed the switch on its own all seemed fine, installed a new T piece making sure to only do it up as tight as necessary, and all was fine after that, though I do agree with what you are saying...
