You are correct, original HS carb and the needle has never been changed under my ownership.  The only mods I can see are an upgraded exhaust manifold and a minispares intake.  Newish cap, wires and coil on the car as well.

I check the dashpot oil pretty regularly and try to keep it a few mm's above the plunger (kind of at the level where there is a little flat spot on the rod).  But, that being said, the previous owner used ATF instead of dashpot oil in it.  But the engine ran pretty good so I never bothered to change it out for the correct stuff.  Also, I live in Canada so local parts are far and few between for me and any part I need is typically 2 weeks away minimum and comes from the UK.
Totally different world from when I was messing with a 6.7 Cummins intake manifold—not nearly as easy to source parts for this little guy.

ATF isn’t a big deal—plenty of people run it without problems. With that intake and exhaust setup though, the stock needle might not be ideal anymore. If it feels a bit lean or flat, swapping to a slightly richer needle could help smooth things out.

If it were mine I would simply try a good service first before going into any changes. The air filter is one thing that comes to mind, if it is dirty it will richen the mixture.

Thanks for all the advice guys.  Weather is finally nice enough to get the car out of storage and I'll be fiddling around with it this weekend.

I bought a cheap wideband o2 sensor and gauge to help me figure out exactly what is going on, so I'll get to installing that as well.  I am far from knowledgeable when it comes to carb setup and troubleshooting so having a feedback device that lets me know what my changes are doing is going to be really nice.

I'm curious about the filler cap comment though....what effect would that have on the fueling?  Since this is a canadian model car, it has a different cap than most of the other models.  It looks like this

I would have to see the exact setup but if that is the correct oil filler cap, the failure mode would be running lean due to it leaking. There is probably an inlet somewhere else such as a hose going to the air filter. If that is blocked then it will run rich. Any of the associated hoses could be leaking or blocked and cause the same result. The breather system can also cause it to run rich if the engine oil is somehow contaminated with petrol.
