I did notice the first time when I said it went into the red there was no water left in the rad

This may be significant? Hoses all intact?

I tried what you said earlier.
ie. starting the mini up with the cap off and leaving it tick over for about 15 mins until temp guage was upto half way.
The water was full up when I first started and it started bubbling but as the engine got hotter the bubbles died down and then it stopped bubbling but the water didn't go down at all it was still full up.
I haven't had a chance to test it yet but I will tomorrow, Does the little bit of bubbling mean that there were some little air bubbles trapped in there and have now cleared or does it bubble like that anyway

could be some air bubbles escaping, it will be very hard to get every tiny bit of air out, most cars will have abit of air in the system.. Give it a try and see what its like.

let us know how you get on.

I had the exact same problem except I did start steaming while down the A419 lol! Turned out I had a split thermostat housing. Replaced that and the thermostat and it's run fine ever since :)

I have tested the car out since and the guage does still go up to 3/4 and may creep up still if I booted it more. It never gets really bad though.
But looking at the prices of the thermostats I may as well replace it just incase, What do you think? also if I did would I have to get a new housing for it aswell?

Dunno if you've checked but bad timing/mixture can lead to overheating aswell...mine was having the same symptoms, check your timing and your mixture and then give it another go
