katie (as it is your question hahaha)
you mentioned that you had flushed the rad before your friend so kindly cooked the engine, but you don't mention that you flushed anything after you changed the headgasket.
have you checked to see if you have an airblockage?
saying that my old engine was the same no matter how long it was running for it always read hot, my new engine can idle for as long as i like without moving.

i've been thinking about this all day, well since my last post and a few things have come to mind.
1st your termostate, try taking the termostate out and take the car for a quick run and see what the temp sender say's about the temp, if it stays cold then change thermostate.
2nd because your lovely friend cooked your engine, they might have damaged the elements inside the sender unit, so buy a new one they are cheap enough
