Is there a limit as to how far the stem of the valve should stick up through the head? I have been re-cutting the valve seats and wondered if I can go to deep?

Also my old head (pre A+) had little pieces that drop over the guides and sit on the head before fitting the springs, and my MG metro one doesn't. Can I fit my springs and caps from my old head onto the metro one as the old ones have double springs.

I would be greatful for any help.
