The batter is made. The extra egg white is the secret for a big yorkie.

When I started reading this topic I was going to say 'if anyone calls them Yorkies I will cry'. But then I saw people calling them Yorkies and it's spoiled my christmas slightly. In no situation should they be called Yorkies.
It's like Yorkshires only advertising and as I live there I feel this sacred delicacy should be preserved with correct nomenclature.
