What should I use to clean the MPi inlet manifold and other components? I am afraid that regular carburetor spray cleaner will damage rubber O rings, gaskets and perhaps some of the sensors. I would remove everything, but I am having trouble finding O rings and gaskets on this side of the pond. I am afraid if I remove something the ring or gasket will be damaged

You should be ok with something like WD40, I always use it for cleaning up componants with no side affects to date.
