I think the easiest solution here for you is to just buy new seats.

Something with a shallower base on it might help a lot

nah definitely not selling the seats man, saved up ages to buy them and absolutely love them! :)

Not sure on how people will take this, but you could cut a small section out of the front of the crossmember, slightly further left of the original mountings, and weld in a plate further back and plate the bottom piece up where a hole would be and remount the seat brackets there?

With a welder and some creativity you can do whatever you want. My seats bolt directly down to the floor behind the crossmember, I just spent a while with the seats sitting on blocks of wood until I finally found where I wanted to mount them, and then I made seat mounts to suit.

So basically shifting everything back a bit? Sounds like it could work but the worry with that is the catch release thing on the bottom of the seat wouldn't allow it to be moved because of that black bracket by the tunnel it hooks to?

Basically yeah, and the hoops arent a problem as you can move those quite easily if you need to
