I like stuff chilled to but why do pubs always give you a whole glass full of ice and especially do if your getting a soft drink so they save on
how much coke they give you!
This is still the case if the pub uses one of those free flow soft drinks guns where they press and hold a button on the gun for the corresponding drink and hold the nozzle in the glass until it's full. More and more places use metered dispense systems these days though, so that they can control stock levels more accurately. With these machines they press a "medium size" or "large size" button on the machine, which dispenses an exact number of fluid ounces into the glass which will fill it to the brim if it has a set amount of ice in the bottom. If you ask for the drink without ice you should still get exactly the same amount of drink in the glass but the glass won't be quite as full.

my misses used to work in one of the top restaurants in the country, and the number of rich people trying to show off infront of people they'd brought along was rediculous. they'd say their champagne was flat because it had no bubbles.
in a perfect glass you dont get any.
This is very true, if you look in the bottom of most branded larger pint glasses, you will probably see that a logo has been etched into the glass on the inside. This isn't just corporate branding, the etched logo makes the bottom of the glass more abrasive causing the drink to bubble more. Glasses with these logos in are often known as "sparkler etched" and many breweries/drinks manufacturers supply pub chains with these glasses for free as a form of marketing, as they want their larger to appear very bubbly.
