Thanks Chaps more food for thoughtWhich makes me think it'd be worth blocking those off to see if they might be the source of the problem.
Unless the engine manages to get air from the carbon canister or rocker cover / oil filler cap.
How would I block them off?

Is there a a way to test it’s operation or the purge valve ?
So if I clamp off or remove the small pipe that goes it to the purge valve and check running is that correct as that may be stuck open drawing in air ?

Yes, block off the pipes that go to the purge valve and the engine breathers. Do this on the inlet manifold, in case there are leaks in your rubber pipes.

Looks like just one that goes to the purge valve ? Or do I need to block both ends I.e the one on the purge trace it back to inlet and clamp that aswell so both ends same on breather ?

For testing the purge valve, I would just make one change at a time.
All the hoses should be checked and in good condition.
You can block off the purge valve output by pinching the hose or capping it at the manifold end.

Unplugged the purge valve no change
Tuck the pipe that goes to the purge valve off and sucks like mad in that pipe?
Blocked off all breather hoses no change
Did notice if I take if the pipe that goes from the IACV elbow upto the throttle body itself off the throttle body end and put my finger over it settles down and the revs are fine, still no steps showing thow through out all these tests.
Today I’m going to admit defeat I really have no idea what I’m doing and it’s really getting me down now, we tried

The ECU is self-learning to a certain extent.
All the sensors and adjustments need to be within spec for it to do this with no air leaks.
