Any change that you make to your car to alter it fom its standard specification has to be reported to your insurer and they calculate the risk that you and your car pose based on what you tell them. Standard insurance prices are based on standard car specification and generic groups of people (young male student, new driver for example). Any change that you make means they have to do a fresh calculation from scratch. By changing your car from an auto to a manual you aren't turning it into a standard manual car even if you put a standard engine in it. It will become a modified car. Some insurers only charge you more if there is a specific increase in the power output of the engine but some charge for any change and auto to manual is always going to raise the price a bit. They also charge you for the extra work they have to do in assessing the new risk. If you insure it as a manual Mini and then crash it and they take the car away, run the VIN and find out it is an auto that was converted to manual and you haven't told them they will refuse to pay out and you could be prosecuted for insurance fraud.
