Sticky Toffee Puddings with Toffee Sauce
1 teaspoon vanilla extract
3 oz (75 g) butter, at room temperature
6 oz (175 g) self-raising flour, sifted
5 oz (150 g) caster sugar
2 large eggs
For the sauce:
6 oz (175 g) soft brown sugar
4 oz (110 g) butter
6 tablespoons double cream
To serve:
One scoop of clotted ice cream
and pour sauce over ice cream or leave a puddle.
Dead easy this reciepe
put the blender on and add each of the ingredients one by one.
normally we do it in the order above, butter, flour, sugar and then eggs.
and allow it to keep mixing until a smooth mixture.
divide the mixture equally into eight containers, place them on a baking tray and bake in the centre of the oven for 25 minutes.
When they're cooked, leave them to cool for 5 minutes.
to make the sauce.. bung the sugar and butter into the pan and heat until the sugar and all the butter begins to melt it'll give a nice browny toffee kinda colour. Add the double cream and you dont have to be shy with it either.. (use according to taste)
and allow it to cool.

* 8oz Self-raising flour
* 4oz Marg
* 4oz Castor sugar
* 4oz Dried Fruit (such as currants and/or raisins)
* 1 egg beaten
* A little Milk
* A medium sized greased Baking Tray
Method
1. Sieve flour
2. Rub in marg until the mixture is like fine breadcrumbs, then add sugar and fruit
3. Stir in beaten egg and enough milk so the mixture is of a sticky consistency
4. Then take a spoonful of mixture and drop it into little heaps on to the baking tray. Allowing enough room for the mixture to spread during cooking.
5. Cook in a preheated oven 200°C (Fan-assisted oven 180°C) for 12-15 minutes until crisp and golden brown.
6. Once cooked lift carefully onto a wire cooling tray.
7. Serve with tea or coffee.
